Edward Betts<p>Transformed weekend leftovers into a tasty Monday frittata at my Brussels Airbnb. 🍳✨</p><p>Ingredients:</p><p>½ onion, diced<br>½ courgette, grated<br>Bacon lardons<br>3 mushrooms, diced<br>3 eggs<br>A splash of milk<br>Butter<br>Salt & pepper</p><p>Sauté veggies & bacon, pour in beaten eggs & milk. Cook gently, finish under the grill.
