John SchragI think this block of sunfu (sunflower seed tofu, see picture) marks the end of my non-soy tofu experiments. So far I’ve made tofu from chickpeas, green split peas, yellow split peas, peanuts, pumpkin seeds and red lentils.In terms of taste, texture and ease I’d say the winner is pumfu — pumpkin seed tofu. It squeezes easily, it’s self-coagulating, so you don’t need to add anything to it, the curds are big and firm, and it’s really yummy. Unfortunately it’s also the most expensive, with raw seeds selling at CAN$6.50/lb at the Bulk store near me. Sunflower seed is a third the price, but the yield is lower.I like the variety of healthy protein sources. Today I have seen chickadees, tufted titmice, juncos, sparrows (chipping, song), blue jays, cardinals, American goldfinches, and a mourning dove.
