Pak choi has darker leaves as it matures. Pak choi stems are white, more visibly so when matured. Bok choy stems are pale green. Pak choi has more of a peppery undertone taste, while bok choy has subtle sweetness. Yilin Wang (she/they)<p>I just ordered over 20 rare photos from a second hand bookstore in Chongqing when getting some new Chinese books.
