So, coffee roasting progress tonight:
Did not set a power cord/house on fire. 
First batch tasted HORRIBLE Second batch finished roasting, first crack and then started into second crack, on cast iron outside on a camp stove. Determined why the cheap (clearance) commercial coffee brand that was being purchased (not by me) tasted so bad... Under roasted!! It might be that coffee could be rescued by roasting it again. (Ralph's Signature Select, for the record... consistently sour and tasted exactly like my under-roasted coffee).
Will see how the hopefully properly roasted coffee tastes in the morning.

In the Archiginnasio the walls are covered in around 6000 heraldic arms. These arms commemorate past students, teachers and patrons of the university. Arms were added to the walls until the late 18th century. (The Archiginnasio was built in 1563 so we're taking about 200 years worth of people)
It got me thinking about all the people who come and go from the building, yet it remains.
The "ghosts" right now are those represented by the heraldry, but one day will be us. But it's a Monday morning so don't think about it too deeply okay!

I read in a book about an experiment during which people were given a square of their favorite chocolate and had to rate whether they wanted more after the last piece or if they didn't want any more. The more chocolate they had after a certain point, the less they wanted.
They were either eating the wrong chocolate (probably! milk chocolate is sugar) or were not real chocolate fans.
When I am eating my favorite dark chocolates (90% Lindt or 87% Laima, a Latvian chocolate), I have to hold myself back from eating ever more of it. Both of these chocolates are low in sugar, sugar being further on the list of ingredients compared to other chocolates. So it's more chocolate than anything else, though it isn't bitter like some of those chalky high-percentage chocolates that really don't understand the potential of chocolate at all.
So I guess if I were in that experiment, I would skew the results, and happily.
I say as I eat some dark chocolate accompanied by a mug of chocolate-and-orange rooibos.
