Sylke’s home cookingMy first ever biryani. I had a biryani years ago in a restaurant but I can’t remember much about it, I didn’t even realise that it’s made in the oven. 😅 This one is a meatless version with a tofu, made from a Vegan Richa recipe and it did not disappoint at all. I had to use more rice and water than stated as a recipe for four people doesn’t go far in this three person household and a cup of rice was not enough since we didn’t have anything to eat with this. After soaking the dried hominy for 2 days, I started with a homemade chicken stock and added roasted Hatch chiles and diced celery, carrots, onions, and orange bell peppers. I’m pretty pleased with the results.</p>
The Spoonless Kitchen<p>Aha! I don't use ripe peels, as suggested, because I don't like overripe bananas. </p><p>The result in using slightly-less-ripe peels gives a significantly "meatier" result. I also leave the maple out, as I prefer savoury bacon. I did try ripe peels the first time I used this recipe, and they cooked down much thinner. Just-yellow-ripe, peels with lots of pith, is the way to go for a bacon-like result IMO.</p><p>It does need much (much much much much) longer to marinade than 10min. I did 24 hours+ as I kept adding peels, as I ate through my bananas. Keep the whole thing refrigerated the entire time, obviously.
