#roastTurkey three for three on good roast Turkey…the “secret” is a mix of techniques we’ve used to years like soaking overnight in a salt and garlic brine, no stuffing inside, plenty of salt and garlic/herbs covered by bacon, and this new technique by Alton Brown where you cook at 500F for 30 min, then reduce to 350 until it’s done. No basting. This year the unique part was soaking brown sugar in Thai culinary stock and coating before adding the bacon. Yummmm
