Made this sauce again - this time with my own homegrown Chile de Arbol. Mine are a bit spicier than ones I bought. Sweating but happy. Actually adding more sauce to each taco. Today’s tacos are left over roasted chicken and frijoles negros.

Taco Tuesday in NZ (hadn’t even thought about that until I perused the news). Decided to introduce the family to Korean tacos. Had them a number of times in LA and always craved them again later. Had some pulled pork in the freezer so used that. They love them. Success!

I do wonder if someone has introduced these back into Korea. It is such a fantastic fusion and could only happen in LA with the massive Mexican and Korean populations.
