Kristin Henry<p>Making lentil soup tonight. I've got some fennel bulb and a carrot, so I'm chopping those up and adding them to the mix. I use an immersion blender, when I make lentil soup. So, I do very rough chopping when I'm prepping the veg. No need to dice the onions or garlic when it's just gonna be blended later. consumableJoy<p>Dinner turned out well! Pork roasted about 7 hrs and then blasted with a sugar salt glaze at 500 for 10 minutes. Cut up and served with accompaniments like oysters, kimchi, pickled onions, sliced bell peppers, rice, hot sauces, and lettuce wraps. 6 people destroyed most of it so my fears that it would be too much were unfounded. About 4 hours into the cook. We have adjusted temp down a bit to slow the cooking but seem to have over corrected so we turned temp up again. Aiming for approximately 6 hr total cook time. Looking good! On track maybe for 6:30 or 7 pm dinner pending more temp adjustments. #HomeCooking #cooking #food

“Quick kimchi” is (similarly to quick pickles) just not going to be actual fermented. It’s like a kimchi sauce around the veggies. You can leave it to ferment, but you don’t have to. Last time we ate some right away and let the rest ferment until it got really … funky interesting. ;) #food #homecooking

Made quick kimchi and quick pickled red onions as accompaniments for tomorrow’s Bo Ssam dinner. The kimchi - with apples and daikon - turned out to be much powerfully flavored in the sauce than I meant it to be, but I am leaving it overnight to see how it settles. I used two different kinds of vinegar for the red onions to see which one seems tastier tomorrow. #cooking #homecooking #food

Yesterday there were “marinated” chicken fillets with rice and two kinds of salad. I used quotes as I had forgotten once again that this meal needed planning and so I just put a mix of lemon juice, olive oil, Hungarian paprika powder, coarse kimchi paprika powder, garlic granules and salt and pepper on these chicken fillets and stored them in the fridge like that for a whole of 10 minutes 🤪 While I was busy with something else I spotted a pack of an Indian masala that needs using up and decided to also apply that to the meat. When the chicken was in the oven I boiled the basmati rice (in a saucepan as that’s faster than in the rice cooker), my son made a Caprese salad and I made a quick cucumber salad. The family was happy 😃

I’m somehow not keeping up with my cooking but here’s one from Tuesday, fish with lemon, red onions and coriander. I forgot that the fish needed defrosting and marinating 😅 so I decided that we simply throw everything and some Pak Choi into an oven dish and bake it with the marinade. Guess what, it was absolutely fine 😄

When Mothman is not mothing, he is usually tormenting his other half with his cookering. I love making #vegan Asian style food especially with homegrown veggies (today, aubergine and green beans). Tonight is a medley of:

Gochuchang spiced crispy cauliflower / aubergine and green bean vegan oyster sauce and ginger stew / soy and mirin corn / and jasmine rice, sprinkled with shichimi togarashi.

Dinner smells so good. I have a seasoned pork tenderloin in the oven, roasting, and a skillet of sautéed radishes seasoned with salt, pepper, onion powder, and garlic powder on the stove. I put a lid on it to steam them as they cooked in the butter and olive oil. Just before serving, they'll be sprinkled with grated Parmesan and a little chopped parsley.

I'm hungry.

Roast Duck experiment: duck skin was crispy, some of the meat was a bit dry, but the sauce (orange ginger soy) was universally acclaimed. If I were to do again, I might adjust second roasting time (eg hotter but for shorter period). Duck fat potatoes were loved by all - I combined multiple approaches to create my own way. Can write that up later. #food #homecooking (overall assessment of the duck recipe: good, but I have duck recipes that are better for less effort)
